
Leftover Meatloaf Breakfast Hash
A hearty breakfast or brunch, sure to please anyone!

Method
Preheat oven to 375 degrees F.
Placed diced potatoes, green pepper, red pepper, and onion on a sheet pan lined with parchment paper.
- Drizzle with 2 tbsp olive oil, salt, and pepper. Mix around on parchment. Bake in oven for 15 minutes.
Heat a large frying pan over medium-high heat.
- Add 1 tbsp olive oil, then butter. When hot, add meatloaf and cook for 1-2 minutes to heat through.
- Add potato mixture to pan, and saute over medium high heat until hot and crispy.
- Serve individual plates of breakfast hash with an over easy or sunnyside up egg on top.
