Leftover Meatloaf Breakfast Hash

A hearty breakfast or brunch, sure to please anyone!

Ingredients
  

  • Leftover meatloaf cubed
  • 2 – 3 medium yukon gold potatoes diced
  • ½ green pepper diced
  • ½ red pepper diced
  • 1 small onion diced
  • 2 tbsp Butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 4 eggs to top the hash

Method
 

Preheat oven to 375 degrees F.
    Placed diced potatoes, green pepper, red pepper, and onion on a sheet pan lined with parchment paper.
    1. Drizzle with 2 tbsp olive oil, salt, and pepper. Mix around on parchment. Bake in oven for 15 minutes.
    Heat a large frying pan over medium-high heat.
    1. Add 1 tbsp olive oil, then butter. When hot, add meatloaf and cook for 1-2 minutes to heat through.
    2. Add potato mixture to pan, and saute over medium high heat until hot and crispy.
    3. Serve individual plates of breakfast hash with an over easy or sunnyside up egg on top.
