Leftover Rice Pudding

Ingredients
  

  • 2 cups cooked rice think leftovers!
  • 2 cups whole milk or 1 ½ cups whole milk and ½ cup half and half
  • 1/3 cup granulated white sugar
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • Dash nutmeg
  • ½ cup raisins optional

Method
 

  1. In a medium saucepan heat the rice, milk, sugar, salt, and butter over medium heat. Stir until the milk begins to simmer. Do not let it boil – just a low simmer.
  2. Reduce the heat to low and cook, stirring periodically, until the rice pudding is thickened, about 15 to 20 minutes. Stir in the vanilla, raisins, and a dash of nutmeg.
  3. Serve the rice pudding warm or transfer it to the refrigerator to eat as a cold dessert.

Notes

This recipe uses leftover rice. It’s quick, easy, and delicious!
