Spicy Salmon “Poke” Bowls

Poke is definitely a thing in Hawaii! This do-it-yourself "poke" uses canned salmon, for a budget-friendly alternative that doesn't skimp on flavor!

Ingredients
  

  • 1 5- ounce can pink salmon
  • 2 tablespoons mayonnaise
  • 1 tbsp sriracha adjust to taste
  • 1 tsp soy sauce
  • 1 tsp rice wine vinegar
  • ½ – 1 tsp sesame oil
  • 2 green onions white and greens separated
  • Sea salt
  • Rice
  • Optional garnishes: sliced cucumber avocado, red onion, pickled ginger, edamame, cabbage, carrots

Method
 

  1. Add salmon to a bowl. Add white parts of green onion ot the bowl.
  2. In a small bowl, combine mayonnaise, sriracha, soy sauce, rice vinegar, and sesame oil.
  3. Add mayo mixture to salmon bowl and mix well.
  4. Serve over rice, topped with green parts of green onion, and optional garnishes alongside of the salmon.
